So, we’d like to take it upon ourselves to share these cool restaurant terms, you know…just in case you’re ever in an emergency and need to know what barding means. Allow us:
Barding (v.) to cover a meat with a layer of fat, such as bacon, before cooking, effectively maintaining the moisture of the meat while it cooks to avoid overcooking.
